Pascal was one of the 1st, back in the late 90's, to adopt biodynamics. A very small estate that can be traced back to the mid 15th century and you have a Burgundy estate that knows how to coax Pinot Noir's heady expressions. The Saint François bottling is a purposeful blend of just three barrels from their three village classed vineyards. William Kelley's review is on point here. "The 2021 Volnay Saint François is a beauty in the making, mingling aromas of blackberries and raspberries with notions of forest floor, burning embers and peonies. Medium to full-bodied, sapid and perfumed, with a layered core of fruit, powdery tannins and a mineral finish, this cuvée certainly didn't get the memo that 2021 is supposed to be a "lesser" vintage." - William Kelley
